MATCHA MUSHROOM SHORTBREAD RECIPE

Ingredients:
  • 2-3 tablespoons Matcha Shroom™
  • 2 cups all-purpose flour
  • 1⁄2 teaspoon salt
  • 1 cup unsalted butter
  • 1⁄2 cup powdered sugar
  • ¾ cup white chocolate chips

DIRECTIONS:

  1. Sift the flour, Matcha Shroom™ and salt into a bowl.
  2. In a mixer bowl, beat butter and powdered sugar until light and fluffy.
  3. Gradually add the flour mixture to the mixer bowl, mixing slowly until the dough comes together.
  4. Shape the dough into a log, approximately 2 inches in diameter.
  5. Wrap the dough log in plastic wrap and place it in the freezer for 30 minutes or until firm to the touch.
  6. Preheat the oven to 325ºF.
  7. Slice the chilled dough into 1/4-inch rounds and place them on an ungreased cookie sheet lined with parchment paper or a Silpat, spacing them about 1 inch apart.
  8. Bake for 30-35 minutes, or until the edges are golden brown.
  9. While the shortbread bakes, melt the white chocolate chips and stir in a tablespoon of Matcha Shroom until well combined.
  10. Once the shortbread has cooled, dip half of each cookie into the melted white chocolate mixture and transfer to a wire rack to cool completely.
