MATCHA MUSHROOM SHORTBREAD RECIPE
Ingredients:
- 2-3 tablespoons Matcha Shroom™
- 2 cups all-purpose flour
- 1⁄2 teaspoon salt
- 1 cup unsalted butter
- 1⁄2 cup powdered sugar
- ¾ cup white chocolate chips
DIRECTIONS:
- Sift the flour, Matcha Shroom™ and salt into a bowl.
- In a mixer bowl, beat butter and powdered sugar until light and fluffy.
- Gradually add the flour mixture to the mixer bowl, mixing slowly until the dough comes together.
- Shape the dough into a log, approximately 2 inches in diameter.
- Wrap the dough log in plastic wrap and place it in the freezer for 30 minutes or until firm to the touch.
- Preheat the oven to 325ºF.
- Slice the chilled dough into 1/4-inch rounds and place them on an ungreased cookie sheet lined with parchment paper or a Silpat, spacing them about 1 inch apart.
- Bake for 30-35 minutes, or until the edges are golden brown.
- While the shortbread bakes, melt the white chocolate chips and stir in a tablespoon of Matcha Shroom until well combined.
- Once the shortbread has cooled, dip half of each cookie into the melted white chocolate mixture and transfer to a wire rack to cool completely.
